Mario Fernandez is a global coffee professional with work experience in producing countries across the world. Ph.D. in Food Science with 20+ years of experience in Coffee Science, coffee flavor, coffee quality, sensory analysis, certified Q-Grader and Q Processing Instructor. Experienced in Geographical Indications, GIS, and quality systems. Ph.D. in Food Science at the University of Otago, with the research project: Effect of processing on flavor character of Arabica natural coffee. I had the honor of working with Mario. I always asked him so many questions behind the scenes. I recorded a few of his coffee insights for the first time, and this conversation became Taster Tale 02. His never-ending coffee adventure continues, and so will our conversations.
